These soft tacos are a delicious, fun and family friendly dinner idea. Assemble them however you like, with whatever you like. Below are some ideas for what you could include but you could also mix it up with prawns, halloumi or roasted vegetables. The spice mix can be made on a larger scale and will keep well in an airtight jar for future use.
Cooking Time: 30 minutes (plus marinating time)
Serves: 3-4
Ingredients
2 tbsp chilli powder
1 tbsp ground cumin
1 tsp paprika
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion granules
1/2 tsp oregano
1/2 tsp black pepper
1 tbsp cornstarch
1 rump steak
1 chicken breast
1 red pepper
1 red onion
1 pack of flour tortillas
Method
1. Combine all the spices, salt and cornflour in a bowl and mix well.
2. Coat the chicken breast and steak with a few teaspoons of the spice mix, in separate bowls. Cover and leave in the fridge for a few hours (or overnight) to marinate.
3. Remove the meat from the fridge and fry in a little olive oil on a high heat until golden brown. Remove the steak, when it is cooked to your liking and leave to rest on a plate for a few minutes.
4. Using two forks, shred the chicken breast, then coat in some of the cooking juices from the frying pan. Thinly slice the steak and leave to one side.
5. Finely slice the pepper and onion and add to the frying pan with a teaspoon of the remaining spice mix and cook until soft. Remove from the pan and set to one side.
6. Using a large round cookie cutter, cut out circles from the flour tortillas, to create your mini soft tacos. Wrap the mini tacos in tin foil and heat in the oven for a few minutes. Alternatively warm them in the microwave for one minute.
7. Serve the tacos with your favourite toppings including guacamole, salsa, soured cream, cheese, peppers, onions and jalapenos.
Guacamole Recipe
In a bowl, mash the flesh of one ripe avocado with a fork. Add 2 small finely chopped tomatoes, 1/2 a finely chopped red onion, 1/4 bunch of chopped coriander and a squeeze of lime juice. Finally add a tbsp of low fat yoghurt and stir until you have a creamy, smooth guacamole. Season to taste with salt and pepper. You could also add some finely chopped red chilli for a little kick.
Salsa Recipe
Finely chop 4 small tomatoes and add to a bowl. Add 1/2 a finely chopped red onion and one crushed garlic clove. Add a splash of white wine vinegar and the juice of half a lime. Stir in 1/4 bunch of finely chopped coriander and stir well. Season with salt and pepper.
