Simple and quick, these sausage rolls are a perfect lunchtime snack. The pepper jelly gives them a real kick but could be swapped out for something milder. If you don't have pepper jelly you could use chilli jam.
Cooking Time: 20 minutes
Makes: 10 large sausage rolls
Ingredients
320 g pack ready rolled puff pastry
2 tbsp pepper jelly
400 g sausage meat
1 egg
1 tsp sesame seeds
Method
1. Preheat the oven to 180⁰C.
2. Lay out the puff pastry on a clean surface. Cut the pastry in half length-ways with a sharp knife to make two long, thin sheets of pastry.
3. Using a spoon, spread the pepper jelly evenly over the surface of both pastry sheets.
4. Separate the sausage meat into 2 equal portions. Carefully roll the sausage meat into a rough sausage shape the same length of the pastry. Place on top of the pepper jelly.
5. Fold the pastry over the meat filling, pressing the edges down and using the pepper jelly to stick the two pastry edges together. Turn the sausage roll over so the seam is underneath.
6. Using a sharp knife, cut the sausage rolls into the desired size and place on a lined baking sheet.
7. Beat the egg in a bowl. Using a pastry brush, brush the egg over the tops of the sausage rolls. Sprinkle the sesame seeds over the top.
8. Bake in the preheated oven for 20-25 minutes or until golden brown and crisp. Remove from the oven and allow to cool slightly before eating.
