Homemade Fresh Pasta

This fresh homemade pasta will keep you wanting more. So fun to make and incredibly therapeutic. You can use the resulting dough in a variety of different dishes. It can also be frozen in batches and then defrosted and rolled out when you need it. Certainly a recipe worth having a go at if you have a bit more time on your hands due to lock down. If you don't have a pasta machine, you can use a rolling pin but it will take longer and require a bit more patience.

Cooking Time: 1 hour (plus cooling time)

Ingredients


200 g Type 00 flour

2 large eggs


Method


1. Sieve the flour into a large glass bowl. Using your hands, create a well in the middle of the flour. Crack the eggs into the well.

2. Using a fork, whisk the eggs until they form a thick paste with some of the flour. Now using your hands, slowly combine the remaining flour until you have a crumbly dough consistency. Squeeze the dough pieces into one loose ball.

3. On a clean surface, vigorously knead the dough for 5-10 minutes until it has become warm, shiny and elastic. Wrap the dough in two layers of clingfilm and place in the fridge to rest for at least 30 minutes.

4. When you are ready to cook, remove the dough from the fridge and unwrap. Squash the ball of dough into a rough rectangle shape.

5. Place your pasta machine on its widest setting, and run the dough through, flouring it lightly if it begins to stick. Drop the pasta machine down to its next setting and run the dough through again. Now fold the dough in half length-ways. Put the pasta machine back to its widest setting and run the dough through again. Repeat this process 5-6 times. It will continue the kneading of the pasta and result in a lovely light and springy pasta.

6. When you have finished this process, run the dough through all the gradually declining sizes on the pasta machine until you have a beautifully thin and long stretch of pasta. Gently flour the dough on both sides each time you pass it through the machine to prevent it from sticking.

7. From here you can choose what to do with your pasta next. You can leave it as it is for delicious fresh lasagne sheets, slice it thickly to make homemade pappardelle or run it through the spaghetti or tagliatelle attachments on your pasta machine.
