Halloumi Tray Bake

This tray bake is perfect for when you have friends round and you need an easy and quick crowd-pleaser. It is also perfect for BBQs as it can be roasting away in the oven while the sausages and burgers crisp up on the grill. You can adapt this to add any vegetables you like, and throw in any additional herbs and spices you fancy.



Cooking Time: 1 hour 15 minutes

Serves: 6


Ingredients


500 g baby new potatoes

2 red onions, sliced

5 cloves of garlic, bashed

3 bell peppers, chopped

8 vine tomatoes

1 head of broccoli, broken into florets

small bunch fresh rosemary and thyme

2 tbsp olive oil

salt and pepper, to taste

2 blocks of halloumi, cut into cm slices


Method


1. Preheat the oven to 180⁰C.

2. Parboil the new potatoes in a large pan of salted water for 5 minutes. Do not overcook the potatoes or they will fall apart during later cooking. Drain the potatoes and add into a large roasting tray.

3. Add the sliced onions to the tray along with the garlic cloves, peppers, tomatoes and broccoli florets. Pick the leaves off the herbs and scatter over the vegetables. Drizzle over the olive oil and mix the vegetables well until coated in the oil. Season with a good pinch of salt and pepper.

4. Place the slices of halloumi over the top of the vegetables. Roast in the oven for 45 minutes to 1 hour or until the vegetables are tender and beginning to caramelise. The halloumi should be golden brown. Serve while still piping hot.
