Ever since going to Rome two summers ago I have wanted to have a go at trying this dish but haven't, which is ridiculous as it is one of the easiest recipes out there. Three super simple ingredients: spaghetti, pepper and Pecorino, combine to create a crazily delicious and soothing dish. Not only is it really cheap to make but also can be whipped up in little over 10 minutes.
Preparation Time: 10 minutes
Serves: 2
Ingredients
150 g dried spaghetti
1 tbsp cracked black pepper
50 g grated Pecorino Romano
Method
1. Cook the spaghetti in a large pan of salted water. It is important to put a good amount of salt in the water as the flavour of the spaghetti will shine through in this dish. Bland spaghetti will result in a bland meal.
2. While the pasta is cooking, place the black pepper in a large ceramic bowl along with the grated parmesan. Give the two a stir to combine them evenly.
3. When the pasta is al dente, ladle a few spoonfuls of the hot pasta water over the cheese and pepper mixture. Stir together to create a thin cheesy sauce.
4. Next add the pasta to the bowl and stir, ensuring everything is coated in the sauce. Add more of the pasta water if the pasta gets too dry.
5. Serve your pasta with more cracked black pepper, a generous grating of Pecorino, and a drizzle of olive oil. You could add a sprinkle of chilli flakes for a little heat and finely chopped parsley for some colour if you like.
